Mummy May I?

Spooky mummy pizzas from Whole Foods Market are the perfect pre-trick-or-treating dinner.

There are three universal truths about Halloween:
1. September's Superman will always want to be Batman by October.
2. Mini Butterfingers pair surprising well with Pinot Noir.
3. The more little bellies are full with healthy stuff, the less room they've got for junk. 
To help fuel your superhero (and increase your odds for scoring some Snickers of your own), we're sharing a healthy Halloween recipe from Whole Foods Market that's a little bit tricky and a whole lot treaty.
Mini Mummy Pizzas
Makes 8 mummies
4 whole wheat English muffins, split and toasted
2/3 cup red pepper marinara sauce
1 cup finely chopped kale or chard
1 yellow or green bell pepper, cored and finely chopped
1 (6-ounce) package light string cheese
16 slices black olives
Preheat the oven to 400°F. Arrange muffins on a parchment-paper-lined baking sheet and spoon marinara onto each half. Top with kale and peppers, and then shred cheese into strings, arranging it over the muffins like a mummy’s bandages. Arrange 2 olive slices on each half for eyes and bake until cheese is melted, about 15 minutes.
